We are a company that likes all things rustic: rustic furnishings, vacations (see the blog on Telluride, CO), décor, clothing, and food. This blog, we figured we would get you in the rustic mood with a little soup to welcome the most rustic season of them all: fall!
My favorite thing about fall is curling up by the fire and enjoying a warm bowl of soup or cup of hot chocolate. Picture you and your sweetie sitting in two Heritage Rockers in front of the fire sharing a simple, tasty meal. At Rustic Furniture Pro, we believe that rustic furnishings add a little something extra to your home around the holidays. Add a little rustic, add a little warmth.
Without further ado, here is the perfect rustic soup for your rustic-inspired fall evening:
Rustic Chipotle Chicken Soup:
**Serves approximately 4
What You Need:
- 1 can of stewed tomatoes
- 1 can of navy beans (strained)
- ½ of one can of corn (strained)
- 1 14 oz. can of chicken broth
- 1/2 T. of cumin
- 2 chipotle peppers (in the canned peppers section- they are generally in adobo sauce)
- 2 large chicken breasts
- Garnish: mozzarella cheese, avocado, cilantro, jalapenos
Directions:
- In a large pot, combine the stewed tomatoes, navy beans, corn, chicken broth, cumin and diced chipotle peppers. Bring to a boil, then allow to simmer for 10 minutes.
- In another pot, boil the two chicken breasts until fully cooked. Remove chicken breasts and allow to cool. Using your hands (this is a RUSTIC soup after all!), shred the chicken.
- Place the shredded chicken into the simmering soup. Allow to heat thoroughly.
- Garnish, serve and enjoy!
